Blood Sugar Level Records with Matsuya's Beef Bowl

Blood Sugar Level Records with Matsuya's Beef Bowl

Gyudon (beef bowl) is a popular Japanese dish consisting of beef and onions simmered in a sweet and savory sauce served over rice. While simple, it offers a deep flavor profile and is widely enjoyed as a representative Japanese fast food dish. However, due to its high white rice content, some people may be concerned about rapid blood sugar spikes.

Therefore, I used CGM (Continuous Glucose Monitoring) to measure "how blood sugar levels change when eating Matsuya's beef bowl, and if there are differences depending on how it's eaten."

    What is Matsuya?

Japan has many "gyudon chain" restaurants where you can easily enjoy delicious beef bowls. Among them, Matsuya is a chain restaurant known for its reasonable prices and extensive menu. Unlike other beef bowl chains, one of its distinctive features is that miso soup is included free of charge.

    Regular Size Beef Bowl

The regular size beef bowl comes with free miso soup. As of March 2025, it costs 430 yen (less than 3 USD) and contains about 700 kcal, which is sufficient for one meal.

Blood sugar levels rose to around 200 and remained slightly elevated even after 3 hours.

Regular Size Beef Bowl + Salad

This is a combination of a regular size beef bowl and salad. The salad costs 150 yen (about 1 USD). This is my usual order.

Blood sugar levels rose to around 200. A detailed comparison will be made on the next page, but overall blood sugar levels remained lower compared to having the beef bowl without salad.

Regular Size Beef Bowl + 200ml Milk

This is a combination of a regular size beef bowl and 200ml of milk. Since Matsuya doesn't sell milk, I bought it from a supermarket and drank it before visiting the restaurant.

Blood sugar levels rose to around 170. A detailed comparison will be made on the next page, but the peak blood sugar level was lower than with salad.

Regular Size Beef Bowl + Salad + 200ml Milk

This is a combination of a regular size beef bowl, salad, and 200ml of milk. I combined the salad and milk, which both showed positive effects.

Blood sugar levels were kept to a rise of around 170. Adding milk significantly suppressed the blood sugar increase.

    Matsuya Summary

On the next page, I compare and analyze the characteristics of these four eating methods by combining their blood sugar changes into a single graph. Please check it out to see how each eating method differently affects blood sugar levels.
